Hakusan Kikusake

A blessing from the sacred Mt. Hakusan, the cool and clear water of the Tedori River System has been used for sake brewing since ancient times. The effects from geological strata and other elements contribute to the high ratings the sake has received both domestically and internationally. Currently, there are five brewers, and 13 brands of Hakusan Kikusake developed according to rigorous standards and with a strong commitment to fine sake. Ankoro

Wrapped in a bamboo sheath, ankoro is a simple Japanese rice cake ( mochi ) made of glutinous rice grown at the foot of Mt. Hakusan, adzuki beans grown in Hokkaido, and sugar. People love our ankoro for its softness and simple, elegant sweetness. Enpachi has steadfastly maintained the original characteristics of the shop's ankoro since its establishment in 1737. Visitors are free to tour the factory to see the production process.

Blowfish ovary nukazuke pickles

While blowfish are known to contain lethal amounts of poison, we offer a fermented blowfish ovary that has been detoxified by pickling it in salt for one year and then pickling it in rice bran for 18 months. This product is prized as a miraculous fermented food available only in Hakusan City. Ideal for pasta dishes and as an accompaniment for sake.

Katadofu (Hard tofu)

Tofu, which is made of soybeans, is usually soft. Yet katadofu (literally "hard tofu") is so hard it will retain its shape even when tied up with a rope. Full of the natural taste of soybeans, it is a specialty food of the region at the foot of Mt. Hakusan. In addition to eating it as it is, we recommend deep frying it or pan frying it to make "tofu steak".

Tsurugi TKGY

This is a casual specialty dish (known as a "B-grade gourmet dish") of Tsurugi, Hakusan City. TKGY stands for Tamago Kake Gohan Yaki, which roughly translates as "pan-fried rice topped with egg". Made with local rice, blended eggs and broth-flavored soy sauce, this large burger-like dish has a crispy outside and soft, fluffy inside. Enjoy its crispy outside, fluffy inside, and the appetizing aroma of the locally made broth-flavored soy sauce.
